This boneless Iberian paleta de cebo de campo comes from 100% pure Iberian pigs that graze on cork and holm oaks and feed on fodder and grasses. The aging period is between 24 and 36 months in the continental climate of Guijuelo in natural dry rooms and cellars.
Characteristics:
This excellent ham is characterized by fine, long, well-rounded bones and adequate fat content with a tender texture.
The meat has a cherry red color with good infiltration and grain and the characteristic shine of the meat and fat.
