The Iberian pig of this shoulder is 50% Iberian breed, and has been fed with fattening, consisting of natural feed based on cereals and legumes. This type of feed, together with its physical activity and the genetics of the Iberian pig, results in meat with an unequalled flavor and a perfect balance of lean and infiltrated fat.

Elaboration and maturation:

The elaboration of our Iberian paletilla de cebo follows an artisanal process that has been passed down from generation to generation. After salting, the pieces are washed and passed to the post-salting chambers, where the salt is distributed homogeneously throughout the shoulder. The piece is then subjected to a natural drying process in our dryers in the Sierra de Extremadura, where the climatic conditions provide a slow and natural curing process.

The Altanza Iberian cebo de cebo shoulder is matured for between 18 and 24 months. This extended curing period allows the shoulder to develop a deep and complex flavor, with nutty notes and a smooth texture that melts in the mouth.
