This shoulder has a green flange according to R.D 4/2014 of the Iberian Standard, which guarantees that it is a 50% Iberian shoulder and that the pigs have been fed on pasture during the montanera phase.
This Iberian paleta de cebo de campo has been produced in a traditional and natural way in the Sierra de Huelva or Sierra de Aracena y Picos de Aroche, a region well known in the ham industry for the great quality and flavor of its Iberian hams and paletas de cebo de campo. Its most famous towns for their excellent Iberian hams are Cala, Cortegana, Cumbres Mayores or Jabugo.
