What is the Iberian Morcón de Bellota?
Morcón is a sausage made from Iberian pigs fed on grass and acorns, the same pigs that produce high quality acorn-fed Iberian hams. Morcón is very similar to chorizo, except that it is produced in a different format using natural casings of larger diameter.
Good quality, lean meat is usually used, which is minced and seasoned with marinades that give it its unique flavor. This marinade usually consists of paprika, garlic, salt, and some other spices, depending on the manufacturer.
The morcón is cured for a long time, because although both the flavor and the texture may remind you of a chorizo, being so thick it needs a longer curing time to make you lick your fingers when it arrives to your plate.
